Ingredients

  • 1.5 lbs (680 g) beef chuck, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 medium potatoes, diced
  • 1 cup (150 g) frozen peas
  • 1 cup (240 ml) beef broth
  • 1/2 cup (120 ml) stout beer (like Guinness)
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 1 lb (450 g) puff pastry (store-bought or homemade)
  • 1 egg, beaten (for egg wash)

Instructions

Step 1: Prepare the Beef

Begin your culinary journey by seasoning the beef cubes generously with salt and pepper. This sets the flavorful foundation of your pie.

Step 2: Sauté the Vegetables

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onions and sauté until they are translucent, about 5 minutes. Then introduce the minced garlic and cook for an additional 1-2 minutes until fragrant.

Step 3: Brown the Meat

Increase the heat to medium-high and add the seasoned beef cubes to the pot. Brown the meat on all sides, about 5-7 minutes. Don’t overcrowd the pot; you may need to do this in batches. Browning locks in flavor and ensures a rich filling.

Step 4: Add the Vegetables

Once the beef is browned, add the carrots and potatoes. Stir well to coat the vegetables in the delicious beef juices.

Step 5: Build the Sauce

Mix in the frozen peas, beef broth, stout beer, and tomato paste. Stir in the dried thyme and rosemary. Bring the mixture to a gentle boil, then reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours, or until the beef is tender and the flavors meld beautifully.

Step 6: Thicken the Filling

If the filling is too thin, you can thicken it with a cornstarch slurry (mix equal parts cornstarch and cold water, then stir it into the filling). Allow it to simmer for an additional 10 minutes until thickened. Taste and adjust seasoning as necessary.

Step 7: Prepare the Puff Pastry

While the filling is cooking, preheat your oven to 400°F (200°C). If you’re using store-bought puff pastry, roll it out on a lightly floured surface to fit your pie dish. If making homemade pastry, prepare it according to your favorite recipe and roll to the same dimensions.

Step 8: Assemble the Pie

Once your filling is ready, transfer it into a pie dish. Lay the puff pastry over the top, trimming any excess. Press the edges with a fork to seal. Cut a few slits in the top of the pastry to allow steam to escape.

Step 9: Give it a Golden Shine

Brush the top with the beaten egg; this will give your pie that beautiful golden color.

Step 10: Bake the Pie

Place the pie in your preheated oven and bake for 25-30 minutes, or until the pastry is golden brown and puffed up. The aroma that fills your kitchen will be nothing short of heavenly!

Step 11: Cool and Serve

Once baked, remove the pie from the oven and let it cool for about 10 minutes before serving. This allows the filling to set slightly, making it easier to slice.

Step 12: Enjoy!

Serve hot with a side of mashed potatoes or a fresh green salad for a complete meal. Gather your family around the table and relish the warmth and love embedded in each bite of your Irish Beef and Vegetable Pie.

Conclusion

Crafting the perfect Irish Beef and Vegetable Pie is not only about fulfilling hunger; it’s an experience rich in aromas, textures, and flavors that transport your taste buds to the lush, green fields of Ireland. This dish beautifully showcases how simple ingredients can be transformed into a heartwarming meal that brings people together. So roll up your sleeves, pour yourself a glass of stout, and embark on this culinary adventure. Your family will appreciate the effort, and you’ll take pleasure in serving a dish that embodies comfort and authenticity.

Frequently Asked Questions

1. Can I use a different type of meat?

Absolutely! While beef is traditional, you can substitute it with lamb or even chicken for a different flavor profile. Just adjust cooking times accordingly, as these meats might require less time to become tender.

2. Is there a vegetarian version of this recipe?

Yes, you can replace the beef with hearty vegetables like mushrooms, lentils, or beans, combined with vegetable broth. It may not taste the same, but it will still be delicious and extremely satisfying!

3. Can I prepare the pie in advance?

Definitely! You can make the filling a day or two ahead and store it in the refrigerator. Assemble the pie with the pastry just before baking. It’s also freezer-friendly; just thaw before baking.

4. What’s the best way to store leftovers?

Store any leftovers in an airtight container in the refrigerator for up to 3 days. You can reheat in the oven, ideally, for the best texture or in the microwave if you’re short on time.

5. Can I make my own puff pastry?

Yes! If you’re feeling adventurous, homemade puff pastry will add a special touch to your pie. Just make sure to follow a trusted recipe for best results.
