At Glendalough Distillery, we believe exceptional flavour begins with exceptional wood. That’s why, for this whiskey, we don’t simply source casks. We manage every stage of the journey, from forest to bottle. Glendalough Single Pot Still starts with Ireland’s quintessential whiskey style, renowned for its rich texture, creamy mouthfeel and depth of character. It is then finished in rare virgin Irish oak sourced from forests within 20 minutes of our distillery in County Wicklow, creating a whiskey that is unmistakably shaped by the landscape that surrounds us. Our involvement goes far beyond selecting oak. We hand-select the forests, choose the individual trees and oversee the process from harvest to cask creation. The oak is transformed into staves, seasoned and raised into bespoke casks before being filled exclusively with Glendalough whiskey. This meticulous hands-on approach allows us to unlock the full flavour potential of one of the rarest and most distinctive woods used in whiskey maturation today. The result is a whiskey with remarkable character and complexity. Honey, orchard fruit and vanilla evolve into layers of sweet malt, warming spice, toasted oak and caramel, finishing long, rich and beautifully balanced.
