Today, we’re diving into the delicious world of colcannon spring rolls, a dish that intertwines the heartiness of traditional Irish colcannon with the crispiness of Asian spring rolls. Suitable for both a cozy night in and an exciting dinner party, these rolls deliver a comforting embrace wrapped in a crunchy coating.

The Story Behind Colcannon

You may be wondering, what exactly is colcannon? At its essence, colcannon is an Irish dish made of mashed potatoes, mixed with either kale or cabbage, sharp butter, and flavors that transport you straight to the Emerald Isle. Traditionally enjoyed during festive seasons, this dish is a warm hug in a bowl.

As food evolves and cultures intermingle, we often find ourselves at the crossroads of tradition and innovation. Our colcannon spring rolls embody this very philosophy, combining rustic Irish ingredients with the crisp allure of Asian cuisine. Let’s get rolling!

Ingredients

For the Colcannon Filling:

  • 2 cups mashed potatoes (preferably made from Yukon Gold)
  • 1 cup finely chopped kale or cabbage
  • 1/2 cup green onions, chopped
  • 1/2 cup cream
  • 4 tablespoons butter
  • Salt and pepper to taste

For the Spring Roll Assembly:

  • 10-12 spring roll wrappers (available at most Asian grocery stores)
  • Oil for frying (vegetable or peanut oil works well)

Instructions

Step 1: Prepare the Colcannon Filling

In a medium saucepan, cook the finely chopped kale or cabbage in a bit of water until tender. Drain and set aside.

In a large mixing bowl, combine the mashed potatoes, cooked greens, green onions, cream, and butter. Season with salt and pepper to taste. Mix until smooth and creamy, embracing the comforting flavors of colcannon.

Step 2: Assembling the Spring Rolls

Lay a spring roll wrapper on a clean surface, with a corner facing you (like a diamond shape). Spoon about 2 tablespoons of the colcannon filling onto the lower half of the wrapper.

Fold the bottom corner up over the filling, followed by the two side corners inward, similar to an envelope. Roll it away from you to form a tight roll.

For added security, brush a bit of water along the top edge to seal the spring roll tightly. Repeat this process until all the filling is wrapped and secured.

Step 3: Frying the Spring Rolls

In a deep frying pan, heat oil over medium-high heat until it reaches about 350°F (or when a small piece of bread sizzles upon contact).

Carefully place a few spring rolls in the hot oil, taking care not to overcrowd the pan. Fry for 3-4 minutes, or until they are golden brown and deliciously crispy.

Using a slotted spoon, remove the spring rolls and drain them on paper towels. This step will help maintain their crunchy texture!

Step 4: Serving the Spring Rolls

Serve your colcannon spring rolls hot, accompanied by a delightful dipping sauce. For an exciting twist, try a sweet chili sauce or even a tangy Irish mustard for an extra kick!
