Inspired by a relentless curiosity and a desire to explore new dimensions of flavour, we travel beyond Ireland in search of exceptional casks capable of creating extraordinary Irish whiskey. Glendalough Double Barrel is a single grain Irish whiskey distilled from a 90% corn mash bill, giving it a naturally smooth, approachable character with notes of honey, vanilla and soft spice. After initial maturation in ex-bourbon American oak, the whiskey is transferred to bespoke casks created exclusively for Glendalough Distillery in Montilla, southern Spain, just outside the famous Sherry Triangle. Working directly with a family-run bodega and cooperage, we select the Oloroso used to season the casks, determine how long the seasoning process lasts and decide precisely when each cask is emptied and shipped to Ireland. The result is a level of control and flavour influence rarely found in Irish whiskey. These specially prepared casks add layers of rich dried fruit, toasted oak, spice and complexity while preserving the smooth, easy-drinking character that makes Double Barrel so versatile. BESPOKE CASKS FROM MONTILLA, SPAIN – Our whiskey begins in flame-charred ex-bourbon barrels before travelling to Montilla, just outside Spain’s famous Sherry Triangle. We work directly with a family-run cooperage and bodega, selecting the wine used to season our casks, deciding how long they are seasoned and exactly when they are emptied and shipped to Ireland.
